Sustainable Development Policy – 2026

At the Moulin de St-Laurent, sustainable development is an integral part of the way we think, cook, and welcome our guests. We are committed to taking concrete actions, both in the short and long term, that respect our environment, support our community, and reflect our core values.

Aware of today’s environmental and social challenges, we believe it is our responsibility to act with consistency, transparency, and commitment. With this in mind, the Moulin de St-Laurent positions itself as a responsible and sustainable player in the restaurant and tourism sector. We are proud to be Biosphere certified, a recognition that confirms our efforts and motivates us to maintain, strengthen, and continuously improve our practices.

Restaurant Commitments

In both the kitchen and dining room, we implement and continue actions aimed at reducing our environmental footprint, including:

  • reducing water and energy consumption;
  • responsible waste management, including recycling and waste reduction;
  • implementing and continuously improving composting practices when possible;
  • collaborating with local and responsible suppliers who share our values.

Commitments Related to Buildings and Infrastructure

In our maintenance, renovation, and development projects, we prioritize an eco-responsible, sustainable, and local approach, including:

  • the use of eco-designed, high-performance, and environmentally respectful materials;
  • purchasing recycled or sustainable materials whenever possible;
  • collaborating with businesses and artisans from Île d’Orléans and the surrounding region.

Community Commitments

The Moulin de St-Laurent firmly believes in the importance of mutual support and local engagement. A community component is actively in place and will continue to evolve, notably through:

  • collaborations with volunteers and organizations on Île d’Orléans;
  • the redistribution of food products in order to reduce waste;
  • concrete actions aimed at supporting the local community.

Continuous Improvement

This sustainable development policy is reviewed and updated annually by an internal committee. Team members who wish to get involved on a voluntary basis are warmly encouraged to do so. Together, we move forward in an evolving approach, guided by our Biosphere certification and our ongoing commitment to improve year after year.
